Description

A healthy and flavorful one-pan dish featuring ground turkey and fresh zucchini, perfect for a quick weeknight dinner.


Ingredients

  • 1 lb ground turkey
  • 2 medium zucchinis, diced
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon crushed red pepper flakes (optional)
  • Salt and pepper to taste
  • 1/4 cup grated Parmesan cheese (optional)
  • Fresh parsley, chopped (for garnish)


Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add chopped onion and sauté for 3-4 minutes until translucent.
  3. Add minced garlic and cook for another 30 seconds.
  4. Add ground turkey to the skillet, breaking it apart with a spoon, and cook until browned and cooked through, about 6-8 minutes.
  5. Season the turkey with oregano, red pepper flakes (if using), salt, and pepper.
  6. Add the diced zucchini and cook for 5-7 minutes until tender but still crisp.
  7. Sprinkle with Parmesan cheese if desired and stir to combine.
  8. Garnish with chopped parsley before serving.

Notes

  • Use lean ground turkey for a lighter dish.
  • Can substitute zucchini with yellow squash or a mix of both.
