A healthy and flavorful one-pan dish featuring ground turkey and fresh zucchini, perfect for a quick weeknight dinner.
Ingredients
- 1 lb ground turkey
- 2 medium zucchinis, diced
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon dried oregano
- 1/2 teaspoon crushed red pepper flakes (optional)
- Salt and pepper to taste
- 1/4 cup grated Parmesan cheese (optional)
- Fresh parsley, chopped (for garnish)
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add chopped onion and sauté for 3-4 minutes until translucent.
- Add minced garlic and cook for another 30 seconds.
- Add ground turkey to the skillet, breaking it apart with a spoon, and cook until browned and cooked through, about 6-8 minutes.
- Season the turkey with oregano, red pepper flakes (if using), salt, and pepper.
- Add the diced zucchini and cook for 5-7 minutes until tender but still crisp.
- Sprinkle with Parmesan cheese if desired and stir to combine.
- Garnish with chopped parsley before serving.
Notes
- Use lean ground turkey for a lighter dish.
- Can substitute zucchini with yellow squash or a mix of both.
- Add cooked rice or quinoa to make it a more filling meal.
