Description
A delicious and easy Ground Turkey Taco Casserole loaded with seasoned turkey, beans, cheese, and tortillas, perfect for a quick weeknight dinner.
Ingredients
- 1 lb ground turkey
- 1 packet taco seasoning
- 1/2 cup water
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup corn kernels (frozen or canned)
- 1 can (10 oz) diced tomatoes with green chilies, drained
- 2 cups shredded Mexican blend cheese
- 8 small flour or corn tortillas, cut into quarters
- 1/2 cup chopped onion
- 2 tablespoons olive oil
- Salt and pepper to taste
- Optional toppings: sour cream, sliced jalapeños, cilantro
Instructions
- Preheat oven to 375°F (190°C).
- In a large skillet, heat olive oil over medium heat. Add chopped onion and cook until translucent.
- Add ground turkey to the skillet and cook until browned. Drain excess fat if necessary.
- Stir in taco seasoning and water. Simmer for 2-3 minutes until sauce thickens.
- Add black beans, corn, and diced tomatoes. Mix well and cook for another 2 minutes. Season with salt and pepper.
- In a 9×13 inch baking dish, layer half of the tortilla pieces, half of the turkey mixture, and half of the shredded cheese. Repeat layers.
- Cover with foil and bake for 20 minutes. Remove foil and bake an additional 10 minutes until cheese is bubbly and golden.
- Let cool slightly before serving. Top with sour cream, jalapeños, and cilantro if desired.
Notes
- Use ground beef or chicken as a substitute for turkey if preferred.
- For a spicier casserole, add extra diced jalapeños or use spicy taco seasoning.
- Leftovers store well in the refrigerator for up to 4 days.
