Description

A delicious and easy Ground Turkey Taco Casserole loaded with seasoned turkey, beans, cheese, and tortillas, perfect for a quick weeknight dinner.


Ingredients

  • 1 lb ground turkey
  • 1 packet taco seasoning
  • 1/2 cup water
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn kernels (frozen or canned)
  • 1 can (10 oz) diced tomatoes with green chilies, drained
  • 2 cups shredded Mexican blend cheese
  • 8 small flour or corn tortillas, cut into quarters
  • 1/2 cup chopped onion
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Optional toppings: sour cream, sliced jalapeños, cilantro


Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat. Add chopped onion and cook until translucent.
  3. Add ground turkey to the skillet and cook until browned. Drain excess fat if necessary.
  4. Stir in taco seasoning and water. Simmer for 2-3 minutes until sauce thickens.
  5. Add black beans, corn, and diced tomatoes. Mix well and cook for another 2 minutes. Season with salt and pepper.
  6. In a 9×13 inch baking dish, layer half of the tortilla pieces, half of the turkey mixture, and half of the shredded cheese. Repeat layers.
  7. Cover with foil and bake for 20 minutes. Remove foil and bake an additional 10 minutes until cheese is bubbly and golden.
  8. Let cool slightly before serving. Top with sour cream, jalapeños, and cilantro if desired.

Notes

  • Use ground beef or chicken as a substitute for turkey if preferred.
  • For a spicier casserole, add extra diced jalapeños or use spicy taco seasoning.
  • Leftovers store well in the refrigerator for up to 4 days.
