These Healthy Pumpkin Oatmeal Bars are a delicious and nutritious snack or breakfast option made with wholesome ingredients like pumpkin puree, oats, and natural sweeteners.
Ingredients
- 1 cup pumpkin puree
- 2 cups rolled oats
- 1/4 cup maple syrup or honey
- 1/4 cup almond butter or peanut butter
- 1 tsp vanilla extract
- 1 tsp pumpkin pie spice
- 1/2 tsp ground cinnamon
- 1/4 tsp salt
- 1/2 tsp baking soda
- 1/4 cup mini chocolate chips (optional)
- 1 egg or flax egg (1 tbsp flaxseed meal + 2.5 tbsp water)
Instructions
- Preheat the oven to 350°F (175°C) and line an 8×8 inch baking dish with parchment paper.
- In a large mixing bowl, combine the pumpkin puree, almond butter, maple syrup, egg (or flax egg), and vanilla extract. Mix until well combined.
- Add in the oats, pumpkin pie spice, cinnamon, salt, and baking soda. Stir until everything is well incorporated.
- Fold in the mini chocolate chips if using.
- Spread the mixture evenly into the prepared baking dish.
- Bake for 25–30 minutes or until the edges are golden and a toothpick inserted in the center comes out clean.
- Allow to cool completely before slicing into bars.
Notes
- Store in an airtight container at room temperature for up to 3 days or refrigerate for up to a week.
- You can substitute almond butter with any nut or seed butter.
- For a vegan option, use a flax egg instead of a regular egg.
