Description

A flavorful and juicy skirt steak marinated with fresh herbs, garlic, and olive oil, then grilled to perfection for a delicious main dish.


Ingredients

  • 1.5 lbs skirt steak
  • 1/4 cup olive oil
  • 3 cloves garlic, minced
  • 2 tbsp fresh rosemary, chopped
  • 2 tbsp fresh thyme, chopped
  • 1 tbsp fresh oregano, chopped
  • 1 tbsp balsamic vinegar
  • 1 tsp salt
  • 1/2 tsp black pepper


Instructions

  1. In a small bowl, combine olive oil, garlic, rosemary, thyme, oregano, balsamic vinegar, salt, and pepper to make the marinade.
  2. Place the skirt steak in a large resealable plastic bag or shallow dish and pour the marinade over it. Seal and refrigerate for at least 2 hours, preferably overnight.
  3. Preheat grill to high heat.
  4. Remove steak from marinade and let excess drip off. Discard the marinade.
  5. Grill the steak for about 3-4 minutes per side for medium-rare, or to your desired doneness.
  6. Transfer steak to a cutting board and let rest for 5 minutes before slicing against the grain.
  7. Serve hot with your favorite sides.

Notes

  • Skirt steak is best cooked quickly over high heat to prevent toughness.
  • Letting the steak rest before slicing helps retain its juices.
  • Great served with chimichurri, roasted vegetables, or a fresh salad.
