Description

Hibachi Shrimp Fried Rice is a flavorful and satisfying dish featuring shrimp, vegetables, and rice stir-fried in a savory sauce, inspired by the Japanese hibachi grill style.


Ingredients

  • 1 lb shrimp, peeled and deveined
  • 2 cups cooked rice (preferably cold)
  • 2 tablespoons vegetable oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1/2 cup frozen peas and carrots
  • 2 eggs, beaten
  • 3 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon oyster sauce
  • 1 tablespoon rice vinegar
  • 2 green onions, chopped
  • Salt and pepper to taste


Instructions

  1. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
  2. Add the shrimp and cook until pink, about 2-3 minutes per side. Remove the shrimp from the skillet and set aside.
  3. In the same skillet, add the remaining vegetable oil and sauté the onion and garlic until softened, about 2-3 minutes.
  4. Add the peas and carrots and cook for another 2 minutes until tender.
  5. Push the vegetables to one side of the skillet and add the beaten eggs. Scramble the eggs until fully cooked.
  6. Add the rice to the skillet and stir to combine with the vegetables and eggs.
  7. Pour the soy sauce, sesame oil, oyster sauce, and rice vinegar over the rice and mix well.
  8. Add the cooked shrimp back to the skillet and stir to combine. Cook for an additional 2-3 minutes to heat everything through.
  9. Season with salt and pepper to taste. Garnish with chopped green onions before serving.

Notes

  • Use cold, day-old rice for the best texture.
  • If you prefer, you can substitute the shrimp with chicken or beef.
  • Adjust the soy sauce and sesame oil to your taste preference.
  • For a spicier version, add some red pepper flakes or chili sauce.
