Description

Honey Roasted Colorful Carrots are a vibrant and tasty side dish made with a medley of rainbow carrots glazed in honey, olive oil, and herbs, then roasted to perfection.


Ingredients

  • 2 lbs colorful carrots, peeled and trimmed
  • 2 tbsp olive oil
  • 2 tbsp honey
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp dried thyme or rosemary (optional)
  • 1 tbsp chopped fresh parsley for garnish (optional)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Line a baking sheet with parchment paper or lightly grease it.
  3. In a large bowl, toss carrots with olive oil, honey, salt, pepper, and herbs if using.
  4. Spread carrots in a single layer on the baking sheet.
  5. Roast for 25-30 minutes, turning halfway through, until carrots are tender and caramelized.
  6. Transfer to a serving platter and garnish with chopped parsley if desired.

Notes

  • Use rainbow carrots for a beautiful presentation, but regular carrots work just as well.
  • Adjust roasting time depending on carrot thickness.
  • Drizzle with a little balsamic reduction for added depth of flavor.
