- 2 lbs colorful carrots, peeled and trimmed
- 2 tbsp olive oil
- 2 tbsp honey
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 tsp dried thyme or rosemary (optional)
- 1 tbsp chopped fresh parsley for garnish (optional)
Instructions
- Preheat oven to 400°F (200°C).
- Line a baking sheet with parchment paper or lightly grease it.
- In a large bowl, toss carrots with olive oil, honey, salt, pepper, and herbs if using.
- Spread carrots in a single layer on the baking sheet.
- Roast for 25-30 minutes, turning halfway through, until carrots are tender and caramelized.
- Transfer to a serving platter and garnish with chopped parsley if desired.
Notes
- Use rainbow carrots for a beautiful presentation, but regular carrots work just as well.
- Adjust roasting time depending on carrot thickness.
- Drizzle with a little balsamic reduction for added depth of flavor.
