Ingredients

  • ¼ cup well-stirred tahini
  • 1 small garlic clove, minced
  • 2 tablespoons extra-virgin olive oil, plus more for serving
  • ½ teaspoon ground cumin
  • Salt to taste (start with ½ teaspoon)
  • 24 tablespoons cold water (adjust for desired consistency)

Optional for Garnish:

  • Pinch of paprika
  • Parsley
  • Toasted pine nuts


Instructions

  1. Blend Tahini and Lemon Juice: In a food processor, combine tahini and lemon juice. Process for 1 minute until smooth and creamy.
  2. Add Garlic and Seasoning: Add minced garlic, olive oil, cumin, and salt. Process again for 30 seconds, scraping down the sides as needed.
  3. Add Chickpeas: Add half the chickpeas to the food processor and blend for 1 minute. Add the remaining chickpeas and blend again until smooth.
  4. Adjust Consistency: With the processor running, slowly add cold water 1 tablespoon at a time until the hummus reaches your preferred texture.
  5. Serve: Scoop into a bowl, drizzle with olive oil, and garnish with paprika, parsley, or pine nuts. Serve with pita, veggies, or as a spread.
