- 1 large whole wheat tortilla
- 1/2 cup hummus
- 1/4 cup roasted red bell peppers
- 1/4 cup roasted zucchini slices
- 1/4 cup roasted eggplant slices
- 1/4 cup shredded carrots
- 1/4 cup baby spinach leaves
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C).
- Slice zucchini and eggplant into thin rounds. Toss with olive oil, salt, and pepper.
- Roast the zucchini and eggplant slices on a baking sheet for 20 minutes, flipping halfway through.
- Lay the tortilla flat and spread hummus evenly over the surface.
- Layer with roasted red peppers, zucchini, eggplant, shredded carrots, and spinach.
- Roll the wrap tightly and slice in half if desired.
- Serve immediately or wrap in foil for later.

- You can use store-bought or homemade hummus.
- Roast vegetables ahead of time for meal prep.
