Description

A wholesome and delicious hummus wrap filled with roasted vegetables, perfect for a quick and healthy meal.


Ingredients

  • 1 large whole wheat tortilla
  • 1/2 cup hummus
  • 1/4 cup roasted red bell peppers
  • 1/4 cup roasted zucchini slices
  • 1/4 cup roasted eggplant slices
  • 1/4 cup shredded carrots
  • 1/4 cup baby spinach leaves
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Slice zucchini and eggplant into thin rounds. Toss with olive oil, salt, and pepper.
  3. Roast the zucchini and eggplant slices on a baking sheet for 20 minutes, flipping halfway through.
  4. Lay the tortilla flat and spread hummus evenly over the surface.
  5. Layer with roasted red peppers, zucchini, eggplant, shredded carrots, and spinach.
  6. Roll the wrap tightly and slice in half if desired.
  7. Serve immediately or wrap in foil for later.

Notes

  • You can use store-bought or homemade hummus.
  • Roast vegetables ahead of time for meal prep.
