Scale
- 4 boneless, skinless chicken breasts
- Salt and black pepper to taste
- 2 tablespoons olive oil
- 2 tablespoons butter
- 2 cloves garlic, minced
- 1 small shallot, finely chopped
- 1/2 cup Irish whiskey (like Jameson)
- 1 cup heavy cream
- 1 teaspoon Dijon mustard
- 1/2 teaspoon dried thyme
- 1/4 teaspoon paprika (optional)
- 2 tablespoons chopped fresh parsley (for garnish)
Instructions
- Season chicken breasts with salt and pepper.
- In a large skillet, heat olive oil over medium-high heat. Sear chicken breasts for 4-5 minutes per side, or until golden and cooked through. Remove and set aside.
- Reduce heat to medium and add butter to the same pan. Sauté garlic and shallot for 1-2 minutes until fragrant.
- Carefully add whiskey to the pan. Simmer for 2-3 minutes to let the alcohol cook off and reduce slightly.
- Stir in heavy cream, Dijon mustard, thyme, and paprika. Simmer for 5-6 minutes, stirring frequently, until the sauce thickens.
- Return chicken to the skillet and spoon sauce over it. Simmer for 2-3 more minutes to heat through.
- Garnish with chopped parsley and serve hot with mashed potatoes or steamed vegetables.
Notes
- Use an Irish whiskey like Jameson for authentic flavor, but any smooth whiskey will work.
- Substitute boneless chicken thighs for a juicier alternative.
- Deglaze the pan well after searing to incorporate all flavor into the sauce.
- Pairs wonderfully with creamy mashed potatoes, roasted root vegetables, or buttered noodles.
