  • 1/2 cup Irish whiskey (like Jameson)
  • 1 cup heavy cream
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon paprika (optional)
  • 2 tablespoons chopped fresh parsley (for garnish)

Instructions

  1. Season chicken breasts with salt and pepper.
  2. In a large skillet, heat olive oil over medium-high heat. Sear chicken breasts for 4-5 minutes per side, or until golden and cooked through. Remove and set aside.
  3. Reduce heat to medium and add butter to the same pan. Sauté garlic and shallot for 1-2 minutes until fragrant.
  4. Carefully add whiskey to the pan. Simmer for 2-3 minutes to let the alcohol cook off and reduce slightly.
  5. Stir in heavy cream, Dijon mustard, thyme, and paprika. Simmer for 5-6 minutes, stirring frequently, until the sauce thickens.
  6. Return chicken to the skillet and spoon sauce over it. Simmer for 2-3 more minutes to heat through.
  7. Garnish with chopped parsley and serve hot with mashed potatoes or steamed vegetables.
