Description

A deliciously hearty Italian Grinder Salad Sandwich combining layers of cured meats, cheese, and a tangy grinder salad on a crusty hoagie roll.


Ingredients

  • 2 hoagie rolls, sliced
  • 1/4 cup mayonnaise
  • 1 tablespoon red wine vinegar
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon garlic powder
  • Salt and black pepper to taste
  • 2 cups shredded iceberg lettuce
  • 1/4 cup sliced red onion
  • 1/4 cup sliced pepperoncini
  • 4 slices provolone cheese
  • 4 slices ham
  • 4 slices salami
  • 4 slices mortadella or capicola
  • 2 slices tomato


Instructions

  1. In a small bowl, mix together mayonnaise, red wine vinegar, Dijon mustard, oregano, garlic powder, salt, and pepper to create the grinder salad dressing.
  2. In a larger bowl, toss shredded lettuce, red onion, and pepperoncini with the dressing until well coated.
  3. Toast the hoagie rolls if desired, then layer each roll with provolone cheese, ham, salami, and mortadella or capicola.
  4. Top the meats with a tomato slice and a generous portion of the dressed grinder salad mixture.
  5. Close the sandwich and press gently. Serve immediately.
