Description
A deliciously hearty Italian Grinder Salad Sandwich combining layers of cured meats, cheese, and a tangy grinder salad on a crusty hoagie roll.
Ingredients
- 2 hoagie rolls, sliced
- 1/4 cup mayonnaise
- 1 tablespoon red wine vinegar
- 1 teaspoon Dijon mustard
- 1/2 teaspoon dried oregano
- 1/4 teaspoon garlic powder
- Salt and black pepper to taste
- 2 cups shredded iceberg lettuce
- 1/4 cup sliced red onion
- 1/4 cup sliced pepperoncini
- 4 slices provolone cheese
- 4 slices ham
- 4 slices salami
- 4 slices mortadella or capicola
- 2 slices tomato
Instructions
- In a small bowl, mix together mayonnaise, red wine vinegar, Dijon mustard, oregano, garlic powder, salt, and pepper to create the grinder salad dressing.
- In a larger bowl, toss shredded lettuce, red onion, and pepperoncini with the dressing until well coated.
- Toast the hoagie rolls if desired, then layer each roll with provolone cheese, ham, salami, and mortadella or capicola.
- Top the meats with a tomato slice and a generous portion of the dressed grinder salad mixture.
- Close the sandwich and press gently. Serve immediately.
