Description

Ingredients

  • 1 cup cooked bulgur wheat
  • 1/2 cup canned chickpeas, rinsed and drained
  • 1/2 cup chopped cucumber
  • 1/2 cup chopped parsley
  • 1/3 cup chopped red onion
  • 1/4 cup chopped mint
  • 1/4 cup chopped pistachios
  • 1/2 cup crumbled feta cheese
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste


Instructions

  1. Cook the bulgur wheat according to package instructions. Let it cool completely.
  2. In a large mixing bowl, combine the cooked bulgur, chickpeas, cucumber, parsley, red onion, mint, and pistachios.
  3. Add the crumbled feta cheese and mix gently.
  4. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
  5. Pour the dressing over the salad and toss to combine.
