Ingredients
- 1 cup cooked bulgur wheat
- 1/2 cup canned chickpeas, rinsed and drained
- 1/2 cup chopped cucumber
- 1/2 cup chopped parsley
- 1/3 cup chopped red onion
- 1/4 cup chopped mint
- 1/4 cup chopped pistachios
- 1/2 cup crumbled feta cheese
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- Salt and pepper to taste
Instructions
- Cook the bulgur wheat according to package instructions. Let it cool completely.
- In a large mixing bowl, combine the cooked bulgur, chickpeas, cucumber, parsley, red onion, mint, and pistachios.
- Add the crumbled feta cheese and mix gently.
- In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
- Pour the dressing over the salad and toss to combine.
- Chill in the refrigerator for at least 30 minutes before serving for best flavor.
