  • 2 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1 tablespoon dried culinary lavender
  • 4 large eggs
  • 1 1/2 cups granulated sugar
  • 1/4 cup all-purpose flour
  • 2/3 cup freshly squeezed lemon juice
  • 1 tablespoon lemon zest
  • Powdered sugar, for dusting

Instructions

  1. Preheat the oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper.
  2. In a bowl, cream together the butter and powdered sugar until light and fluffy.
  3. Add 2 cups of flour, salt, and dried lavender. Mix until a dough forms.
  4. Press the dough evenly into the prepared pan and bake for 20 minutes or until lightly golden.
  5. Meanwhile, whisk together the eggs, granulated sugar, 1/4 cup flour, lemon juice, and lemon zest until smooth.
  6. Pour the lemon mixture over the hot crust and return to the oven. Bake for another 20–25 minutes or until the filling is set.
  7. Let the bars cool completely in the pan, then refrigerate for at least 2 hours before slicing.
  8. Dust with powdered sugar before serving.
