- 1/2 cup powdered sugar
- 2 cups all-purpose flour
- 1/4 teaspoon salt
- 1 tablespoon dried culinary lavender
- 4 large eggs
- 1 1/2 cups granulated sugar
- 1/4 cup all-purpose flour
- 2/3 cup freshly squeezed lemon juice
- 1 tablespoon lemon zest
- Powdered sugar, for dusting
Instructions
- Preheat the oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper.
- In a bowl, cream together the butter and powdered sugar until light and fluffy.
- Add 2 cups of flour, salt, and dried lavender. Mix until a dough forms.
- Press the dough evenly into the prepared pan and bake for 20 minutes or until lightly golden.
- Meanwhile, whisk together the eggs, granulated sugar, 1/4 cup flour, lemon juice, and lemon zest until smooth.
- Pour the lemon mixture over the hot crust and return to the oven. Bake for another 20–25 minutes or until the filling is set.
- Let the bars cool completely in the pan, then refrigerate for at least 2 hours before slicing.
- Dust with powdered sugar before serving.
