Description

Lazy Enchiladas are a quick and easy weeknight dinner made with frozen taquitos, enchilada sauce, and cheese, delivering all the classic flavors with minimal effort.

Ingredients

  • 1 box (20 oz) frozen beef or chicken taquitos
  • 1 can (10 oz) red enchilada sauce
  • 1 cup shredded Mexican blend cheese
  • 1/4 cup chopped green onions (optional)
  • 1/4 cup chopped cilantro (optional)
  • Sour cream, for serving (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Place frozen taquitos in a single layer in a baking dish.
  3. Pour the enchilada sauce evenly over the taquitos.
  4. Sprinkle shredded cheese evenly over the top.
  5. Bake for 20–25 minutes, until cheese is melted and bubbly.
  6. Garnish with green onions and cilantro if desired.
  7. Serve hot with sour cream on the side.

  • Can be made spicier with hot enchilada sauce or jalapeños.
  • Leftovers can be stored in the refrigerator for up to 3 days.
