Description

A refreshing and tangy salad made with crisp greens, lemon vinaigrette, and a generous sprinkle of Parmesan cheese, perfect as a light appetizer or side dish.

Ingredients

  • 6 cups mixed salad greens
  • 1/2 cup shaved Parmesan cheese
  • 1/4 cup fresh lemon juice (about 2 lemons)
  • 1/4 cup extra-virgin olive oil
  • 1 tsp Dijon mustard
  • 1 garlic clove, minced
  • Salt and pepper to taste
  • 1/4 tsp honey (optional, to balance acidity)

Instructions

  1. In a small bowl, whisk together lemon juice, olive oil, Dijon mustard, garlic, salt, pepper, and honey (if using) to make the dressing.
  2. Place the mixed salad greens in a large bowl.
  3. Drizzle the dressing over the greens and toss gently to coat evenly.
  4. Top with shaved Parmesan cheese just before serving.
  5. Serve immediately for best freshness.

Notes

  • Use freshly grated or shaved Parmesan for best flavor.
  • Add grilled chicken or shrimp for a heartier salad.
  • Try arugula or baby spinach for a peppery or softer texture.
