Ingredients
- 1 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 2 cups all-purpose flour
- 1/4 teaspoon salt
- 4 large eggs
- 1 1/2 cups granulated sugar
- 1/4 cup all-purpose flour
- 2/3 cup freshly squeezed lemon juice
- 1 tablespoon lemon zest
- Powdered sugar, for dusting
Instructions
- Preheat the oven to 350°F (175°C) and line a 9×13-inch baking pan with parchment paper.
- In a bowl, cream together the butter and 1/2 cup sugar until light and fluffy.
- Add 2 cups flour and salt, mixing until a dough forms.
- Press the dough evenly into the prepared pan and bake for 15-20 minutes, or until lightly golden.
- Meanwhile, whisk together eggs, 1 1/2 cups sugar, 1/4 cup flour, lemon juice, and lemon zest until well combined.
- Pour the lemon mixture over the hot crust and return to the oven.
- Bake for an additional 20-25 minutes, or until the filling is set.
- Cool completely in the pan, then dust with powdered sugar and cut into bars.
