Description

Lemon Truffles are a bright, creamy, no-bake dessert made with white chocolate, lemon zest, and cream cheese—perfect for a refreshing treat.

Ingredients

  • 1 cup white chocolate chips
  • 4 oz cream cheese, softened
  • 1 tbsp lemon juice
  • 1 tsp lemon zest
  • 1/2 tsp vanilla extract
  • 1/4 cup powdered sugar
  • 1/2 cup crushed graham crackers or vanilla wafers (optional, for coating)

Instructions

  1. Melt the white chocolate chips in a microwave-safe bowl in 30-second intervals, stirring in between until smooth.
  2. In a medium bowl, beat the cream cheese until smooth.
  3. Add the melted white chocolate, lemon juice, lemon zest, vanilla extract, and powdered sugar. Mix until well combined.
  4. Refrigerate the mixture for 1-2 hours or until firm enough to roll.
  5. Once chilled, scoop small portions and roll into balls using your hands.
  6. Roll each truffle in crushed graham crackers or vanilla wafers if desired.
  7. Place on a parchment-lined tray and refrigerate until firm before serving.

Notes

  • For extra lemon flavor, add a few drops of lemon extract.
  • Store truffles in the refrigerator for up to 5 days.
  • You can dip the truffles in melted white chocolate for a more decadent finish.
