Lemon Truffles are a bright, creamy, no-bake dessert made with white chocolate, lemon zest, and cream cheese—perfect for a refreshing treat.
Ingredients
- 1 cup white chocolate chips
- 4 oz cream cheese, softened
- 1 tbsp lemon juice
- 1 tsp lemon zest
- 1/2 tsp vanilla extract
- 1/4 cup powdered sugar
- 1/2 cup crushed graham crackers or vanilla wafers (optional, for coating)
Instructions
- Melt the white chocolate chips in a microwave-safe bowl in 30-second intervals, stirring in between until smooth.
- In a medium bowl, beat the cream cheese until smooth.
- Add the melted white chocolate, lemon juice, lemon zest, vanilla extract, and powdered sugar. Mix until well combined.
- Refrigerate the mixture for 1-2 hours or until firm enough to roll.
- Once chilled, scoop small portions and roll into balls using your hands.
- Roll each truffle in crushed graham crackers or vanilla wafers if desired.
- Place on a parchment-lined tray and refrigerate until firm before serving.
Notes
- For extra lemon flavor, add a few drops of lemon extract.
- Store truffles in the refrigerator for up to 5 days.
- You can dip the truffles in melted white chocolate for a more decadent finish.
