Description

These low carb almond flour bagels are a delicious and healthy alternative to traditional bagels. Made with almond flour and mozzarella cheese, they are perfect for a keto or gluten-free diet.


Ingredients

  • 2 cups almond flour
  • 1 tablespoon baking powder
  • 2 1/2 cups shredded mozzarella cheese
  • 2 oz cream cheese
  • 2 large eggs (one for dough, one for egg wash)
  • Optional toppings: sesame seeds, poppy seeds, everything bagel seasoning


Instructions

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large microwave-safe bowl, combine the shredded mozzarella cheese and cream cheese. Microwave for about 1-2 minutes, stirring halfway through, until melted and combined.
  3. Add the almond flour, baking powder, and one egg to the melted cheese mixture. Mix until a dough forms. Knead with hands if necessary to fully combine.
  4. Divide the dough into 6 equal parts. Roll each into a log and form into bagel shapes. Place on the prepared baking sheet.
  5. Beat the remaining egg and brush over the top of each bagel. Add toppings if desired.
  6. Bake for 12-15 minutes, or until golden brown and firm to the touch.
  7. Allow to cool slightly before serving.

Notes

  • For best texture, use pre-shredded mozzarella cheese.
  • Store in the refrigerator for up to 5 days or freeze for up to 3 months.
  • Great toasted and served with cream cheese or avocado.
