Description
These low carb almond flour bagels are a delicious and healthy alternative to traditional bagels. Made with almond flour and mozzarella cheese, they are perfect for a keto or gluten-free diet.
Ingredients
- 2 cups almond flour
- 1 tablespoon baking powder
- 2 1/2 cups shredded mozzarella cheese
- 2 oz cream cheese
- 2 large eggs (one for dough, one for egg wash)
- Optional toppings: sesame seeds, poppy seeds, everything bagel seasoning
Instructions
- Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a large microwave-safe bowl, combine the shredded mozzarella cheese and cream cheese. Microwave for about 1-2 minutes, stirring halfway through, until melted and combined.
- Add the almond flour, baking powder, and one egg to the melted cheese mixture. Mix until a dough forms. Knead with hands if necessary to fully combine.
- Divide the dough into 6 equal parts. Roll each into a log and form into bagel shapes. Place on the prepared baking sheet.
- Beat the remaining egg and brush over the top of each bagel. Add toppings if desired.
- Bake for 12-15 minutes, or until golden brown and firm to the touch.
- Allow to cool slightly before serving.
Notes
- For best texture, use pre-shredded mozzarella cheese.
- Store in the refrigerator for up to 5 days or freeze for up to 3 months.
- Great toasted and served with cream cheese or avocado.
