Description

A healthy and delicious low-carb alternative to traditional fried rice, using cauliflower rice and packed with veggies and protein.


Ingredients

  • 2 cups cauliflower rice
  • 2 tablespoons sesame oil
  • 2 cloves garlic, minced
  • 1/2 cup chopped onion
  • 1/2 cup diced carrots
  • 1/2 cup green peas
  • 2 eggs, beaten
  • 1/2 cup cooked chicken breast, diced (optional)
  • 3 tablespoons soy sauce or tamari (for gluten-free)
  • 2 green onions, sliced
  • Salt and pepper to taste


Instructions

  1. Heat sesame oil in a large skillet or wok over medium heat.
  2. Add garlic and onion, sauté for 2-3 minutes until fragrant.
  3. Add diced carrots and cook for another 3 minutes until tender.
  4. Stir in the cauliflower rice and peas; cook for 5-7 minutes, stirring frequently.
  5. Push the mixture to one side of the pan and pour in the beaten eggs on the other side.
  6. Scramble the eggs and then mix them into the cauliflower rice mixture.
  7. Add diced chicken if using and soy sauce; stir to combine well.
  8. Season with salt and pepper, garnish with green onions, and serve hot.

Notes

  • You can substitute chicken with shrimp or tofu for variation.
  • Use coconut aminos for a soy-free version.
  • Add chili flakes for a spicy kick.
