Description

Maine Potato Candy, also known as Needhams, is a classic New England treat made with mashed potatoes, coconut, and chocolate. Despite the unusual ingredient, the potato adds moisture and texture without impacting the flavor.


Ingredients

  • 1/2 cup mashed potatoes (plain, no seasoning)
  • 1/2 cup (1 stick) unsalted butter, softened
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 (16 oz) package powdered sugar (about 4 cups)
  • 2 cups shredded sweetened coconut
  • 1 (12 oz) package semisweet chocolate chips
  • 2 tablespoons shortening or coconut oil (optional, for smoother chocolate)


Instructions

  1. In a large mixing bowl, combine mashed potatoes, softened butter, vanilla extract, and salt. Mix until smooth.
  2. Gradually add powdered sugar, mixing until a thick dough forms.
  3. Stir in shredded coconut until fully combined.
  4. Press the mixture into a greased or parchment-lined 9×13 inch pan and refrigerate until firm (about 1-2 hours).
  5. Once firm, cut into small squares or rectangles.
  6. In a microwave or double boiler, melt chocolate chips with shortening or coconut oil until smooth.
  7. Dip each square into the melted chocolate, letting the excess drip off, and place on wax paper or a cooling rack.
  8. Let the chocolate set at room temperature or refrigerate to speed up the process.

Notes

  • Use cold, plain mashed potatoes—no milk, butter, or seasoning added.
  • For easier dipping, freeze the candy pieces for 15-20 minutes before coating with chocolate.
  • Store in an airtight container in the fridge for up to 2 weeks.
  • Can also be frozen for longer storage.
