- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1/2 teaspoon red pepper flakes
- 3 cloves garlic, minced
- 1 cup chicken broth
- 3/4 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1/2 cup chopped sun-dried tomatoes (in oil, drained)
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- Fresh basil, for garnish
Instructions
- Season the chicken breasts with salt, pepper, garlic powder, and red pepper flakes.
- Heat olive oil in a large skillet over medium heat. Add the chicken and sear for 5-6 minutes per side until golden brown and cooked through. Remove and set aside.
- In the same skillet, add minced garlic and sauté for 1 minute until fragrant.
- Pour in the chicken broth and bring to a simmer, scraping up any browned bits from the pan.
- Reduce heat and stir in heavy cream and Parmesan cheese until melted and combined.
- Add sun-dried tomatoes, oregano, and thyme. Simmer the sauce for 2-3 minutes to thicken slightly.
- Return the chicken to the skillet and spoon sauce over the top. Simmer for another 5 minutes.
- Garnish with fresh basil and serve hot.
Notes
- Serve with pasta, mashed potatoes, or crusty bread to soak up the sauce.
- Can be made with chicken thighs for a juicier option.
