Description

Mashed Potato Cups are a fun and tasty way to use up leftover mashed potatoes. Baked in a muffin tin with cheese and seasonings, these individual servings are crispy on the outside and creamy on the inside—perfect as a side dish, appetizer, or snack.


Ingredients

  • 2 cups mashed potatoes (leftover or freshly made)
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 2 tablespoons chopped chives or green onions
  • 1/4 teaspoon garlic powder
  • Salt and pepper to taste
  • Non-stick cooking spray


Instructions

  1. Preheat oven to 400°F (200°C) and lightly grease a 12-cup muffin tin with non-stick spray.
  2. In a large bowl, mix together the mashed potatoes, cheddar cheese, Parmesan, egg, chives, garlic powder, salt, and pepper until well combined.
  3. Spoon the mixture into the muffin tin, dividing evenly among the cups. Press down lightly with the back of a spoon to compact.
  4. Bake for 20-25 minutes, or until the tops are golden and the cups are set.
  5. Let cool for 5 minutes before removing from the muffin tin. Serve warm, garnished with extra chives if desired.

Notes

  • For a crispy bottom, add a sprinkle of breadcrumbs or cheese in the bottom of each muffin cup before filling.
  • You can add crumbled bacon or cooked veggies to the mix for variety.
  • These can be made ahead and reheated in the oven or microwave.
