Description
Mashed Potato Cups are a fun and tasty way to use up leftover mashed potatoes. Baked in a muffin tin with cheese and seasonings, these individual servings are crispy on the outside and creamy on the inside—perfect as a side dish, appetizer, or snack.
Ingredients
- 2 cups mashed potatoes (leftover or freshly made)
- 1/2 cup shredded cheddar cheese
- 1/4 cup grated Parmesan cheese
- 1 large egg
- 2 tablespoons chopped chives or green onions
- 1/4 teaspoon garlic powder
- Salt and pepper to taste
- Non-stick cooking spray
Instructions
- Preheat oven to 400°F (200°C) and lightly grease a 12-cup muffin tin with non-stick spray.
- In a large bowl, mix together the mashed potatoes, cheddar cheese, Parmesan, egg, chives, garlic powder, salt, and pepper until well combined.
- Spoon the mixture into the muffin tin, dividing evenly among the cups. Press down lightly with the back of a spoon to compact.
- Bake for 20-25 minutes, or until the tops are golden and the cups are set.
- Let cool for 5 minutes before removing from the muffin tin. Serve warm, garnished with extra chives if desired.
Notes
- For a crispy bottom, add a sprinkle of breadcrumbs or cheese in the bottom of each muffin cup before filling.
- You can add crumbled bacon or cooked veggies to the mix for variety.
- These can be made ahead and reheated in the oven or microwave.
