Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded Monterey Jack cheese
  • 1 tablespoon butter
  • 1 tablespoon all-purpose flour
  • 1 cup milk
  • 1/4 teaspoon cayenne pepper (optional)
  • 2 tablespoons chopped fresh cilantro (for garnish)


Instructions

  1. Preheat oven to 375°F (190°C).
  2. Rub chicken breasts with olive oil, chili powder, cumin, paprika, garlic powder, salt, and pepper.
  3. Heat a skillet over medium heat and sear the chicken for 3-4 minutes on each side until golden brown.
  4. Transfer chicken to a baking dish and bake for 20-25 minutes or until cooked through.
  5. Meanwhile, in a saucepan, melt butter over medium heat. Stir in flour and cook for 1 minute.
  6. Gradually whisk in milk, stirring constantly until the sauce thickens.
  7. Add cheddar and Monterey Jack cheese, stirring until melted and smooth. Add cayenne pepper if using.
  8. Pour the cheese sauce over the baked chicken and garnish with chopped cilantro.
  9. Serve hot with rice, tortillas, or vegetables.

  • You can use pre-cooked chicken to save time; just heat and top with cheese sauce.
