Ingredients
- 4 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon paprika
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- 1 cup shredded cheddar cheese
- 1/2 cup shredded Monterey Jack cheese
- 1 tablespoon butter
- 1 tablespoon all-purpose flour
- 1 cup milk
- 1/4 teaspoon cayenne pepper (optional)
- 2 tablespoons chopped fresh cilantro (for garnish)
Instructions
- Preheat oven to 375°F (190°C).
- Rub chicken breasts with olive oil, chili powder, cumin, paprika, garlic powder, salt, and pepper.
- Heat a skillet over medium heat and sear the chicken for 3-4 minutes on each side until golden brown.
- Transfer chicken to a baking dish and bake for 20-25 minutes or until cooked through.
- Meanwhile, in a saucepan, melt butter over medium heat. Stir in flour and cook for 1 minute.
- Gradually whisk in milk, stirring constantly until the sauce thickens.
- Add cheddar and Monterey Jack cheese, stirring until melted and smooth. Add cayenne pepper if using.
- Pour the cheese sauce over the baked chicken and garnish with chopped cilantro.
- Serve hot with rice, tortillas, or vegetables.
