Description
Mini Bean and Cheese Quesadillas are a quick and tasty snack or appetizer made with refried beans, melted cheese, and tortillas. They’re perfect for kids, parties, or a light lunch.
Ingredients
- 8 small flour tortillas (street taco size)
- 1 cup refried beans
- 1 cup shredded cheddar or Mexican blend cheese
- 1 tablespoon vegetable oil or butter (for cooking)
- Optional: salsa, sour cream, or guacamole for serving
Instructions
- Heat a skillet over medium heat and lightly grease with oil or butter.
- Spread about 2 tablespoons of refried beans on one half of each tortilla.
- Sprinkle 2 tablespoons of shredded cheese over the beans.
- Fold tortillas in half to form a half-moon shape.
- Place quesadillas in the skillet and cook for 2–3 minutes per side, or until golden brown and cheese is melted.
- Remove from skillet, let cool slightly, then cut in half if desired.
- Serve warm with salsa, sour cream, or guacamole on the side.
Notes
- Use whole wheat or gluten-free tortillas if needed.
- Add a pinch of chili powder or cumin to beans for extra flavor.
- Can be made ahead and reheated in the oven or air fryer.
