Ingredients
- 2 cups old-fashioned rolled oats
- 1 cup natural peanut butter
- 1/2 cup honey or maple syrup
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/4 cup mini chocolate chips (optional)
Instructions
- Line an 8×8-inch baking dish with parchment paper.
- In a medium saucepan over low heat, combine the peanut butter and honey. Stir until melted and smooth.
- Remove from heat and stir in the vanilla extract and salt.
- Mix in the oats until fully combined.
- Let the mixture cool slightly, then fold in the chocolate chips if using.
- Press the mixture firmly into the prepared pan using a spatula or your hands.
- Refrigerate for at least 1 hour or until firm.
- Cut into bars and enjoy.
