Description
A refreshing and light no-bake dessert layered with sweet cream cheese, berry gelatin, whipped topping, and fresh summer berries. Perfect for hot days when you want to avoid the oven.
Ingredients
- 2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 8 oz cream cheese, softened
- 1 cup powdered sugar
- 2 cups whipped topping (like Cool Whip), divided
- 1 package (3 oz) strawberry or raspberry flavored gelatin
- 1 cup boiling water
- 1/2 cup cold water
- 2 cups mixed fresh berries (strawberries, blueberries, raspberries)
- 1 package (3.4 oz) instant vanilla pudding mix
- 1 1/2 cups cold milk
- Extra berries and mint leaves for garnish (optional)
Instructions
- In a medium bowl, mix graham cracker crumbs and melted butter. Press the mixture into the bottom of a 9×13 inch pan to form the crust. Chill in the fridge while preparing the next layers.
- In a bowl, beat the cream cheese and powdered sugar until smooth. Fold in 1 cup of whipped topping. Spread over the crust and refrigerate.
- In another bowl, whisk together the vanilla pudding mix and cold milk. Let it sit for 5 minutes to thicken, then spread it over the cream cheese layer. Refrigerate again.
- Dissolve gelatin in 1 cup boiling water, then stir in 1/2 cup cold water. Let it cool slightly until just beginning to set.
- Mix fresh berries into the gelatin and pour the mixture over the pudding layer. Chill until the gelatin is fully set (about 2-3 hours).
- Top with remaining whipped topping and garnish with extra berries and mint leaves if desired. Chill before serving.
Notes
- You can substitute graham crackers with vanilla wafers or shortbread cookies for the crust.
- Use sugar-free pudding or gelatin for a lighter version.
- Let each layer chill and firm up before adding the next to ensure clean layers.
