Description

A refreshing and light no-bake dessert layered with sweet cream cheese, berry gelatin, whipped topping, and fresh summer berries. Perfect for hot days when you want to avoid the oven.


Ingredients

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 8 oz cream cheese, softened
  • 1 cup powdered sugar
  • 2 cups whipped topping (like Cool Whip), divided
  • 1 package (3 oz) strawberry or raspberry flavored gelatin
  • 1 cup boiling water
  • 1/2 cup cold water
  • 2 cups mixed fresh berries (strawberries, blueberries, raspberries)
  • 1 package (3.4 oz) instant vanilla pudding mix
  • 1 1/2 cups cold milk
  • Extra berries and mint leaves for garnish (optional)


Instructions

  1. In a medium bowl, mix graham cracker crumbs and melted butter. Press the mixture into the bottom of a 9×13 inch pan to form the crust. Chill in the fridge while preparing the next layers.
  2. In a bowl, beat the cream cheese and powdered sugar until smooth. Fold in 1 cup of whipped topping. Spread over the crust and refrigerate.
  3. In another bowl, whisk together the vanilla pudding mix and cold milk. Let it sit for 5 minutes to thicken, then spread it over the cream cheese layer. Refrigerate again.
  4. Dissolve gelatin in 1 cup boiling water, then stir in 1/2 cup cold water. Let it cool slightly until just beginning to set.
  5. Mix fresh berries into the gelatin and pour the mixture over the pudding layer. Chill until the gelatin is fully set (about 2-3 hours).
  6. Top with remaining whipped topping and garnish with extra berries and mint leaves if desired. Chill before serving.

Notes

  • You can substitute graham crackers with vanilla wafers or shortbread cookies for the crust.
  • Use sugar-free pudding or gelatin for a lighter version.
  • Let each layer chill and firm up before adding the next to ensure clean layers.
