Description

Oven Roasted Chicken is a classic and flavorful dish where whole or bone-in chicken is seasoned and roasted until juicy on the inside with crispy, golden skin on the outside.


Ingredients

  • 1 whole chicken (about 4 pounds), giblets removed
  • 2 tablespoons olive oil or melted butter
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1/2 teaspoon dried thyme
  • 1 lemon, halved
  • 4 cloves garlic, peeled
  • Fresh herbs (rosemary, thyme, or parsley), optional for stuffing

Instructions

  1. Preheat oven to 425°F (220°C). Pat chicken dry with paper towels.
  2. Rub the chicken all over with olive oil or melted butter.
  3. In a small bowl, mix salt, pepper, garlic powder, onion powder, paprika, and dried thyme. Rub the seasoning mixture all over the chicken, including under the skin if possible.
  4. Stuff the cavity with lemon halves, garlic cloves, and fresh herbs if using.
  5. Place the chicken breast side up in a roasting pan or oven-safe skillet with a rack.
  6. Roast for about 1 hour and 15 minutes, or until the internal temperature in the thickest part of the thigh reaches 165°F (74°C).
  7. Let rest for 10-15 minutes before carving and serving.

Notes

  • Basting once or twice during roasting helps keep the chicken moist.
  • Use drippings to make a simple gravy or sauce.
  • Leftovers are perfect for sandwiches, soups, or salads.
