Oven Roasted Chicken is a classic and flavorful dish where whole or bone-in chicken is seasoned and roasted until juicy on the inside with crispy, golden skin on the outside.

- 1 whole chicken (about 4 pounds), giblets removed
- 2 tablespoons olive oil or melted butter
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- 1/2 teaspoon dried thyme
- 1 lemon, halved
- 4 cloves garlic, peeled
- Fresh herbs (rosemary, thyme, or parsley), optional for stuffing
Instructions
- Preheat oven to 425°F (220°C). Pat chicken dry with paper towels.
- Rub the chicken all over with olive oil or melted butter.
- In a small bowl, mix salt, pepper, garlic powder, onion powder, paprika, and dried thyme. Rub the seasoning mixture all over the chicken, including under the skin if possible.
- Stuff the cavity with lemon halves, garlic cloves, and fresh herbs if using.
- Place the chicken breast side up in a roasting pan or oven-safe skillet with a rack.
- Roast for about 1 hour and 15 minutes, or until the internal temperature in the thickest part of the thigh reaches 165°F (74°C).
- Let rest for 10-15 minutes before carving and serving.
Notes
- Basting once or twice during roasting helps keep the chicken moist.
- Use drippings to make a simple gravy or sauce.
- Leftovers are perfect for sandwiches, soups, or salads.
