Description

A delicious and crispy Parmesan crusted salmon on a fresh Caesar salad, combining the rich flavors of baked salmon and the classic Caesar dressing.


Ingredients

  • 4 salmon fillets
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup breadcrumbs
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 4 cups Romaine lettuce, chopped
  • 1/4 cup Caesar dressing
  • 1/4 cup croutons
  • Fresh lemon wedges (optional)


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Mix the grated Parmesan cheese and breadcrumbs in a shallow dish.
  3. Season the salmon fillets with salt and pepper, then coat the tops with the Parmesan-breadcrumb mixture, pressing lightly to ensure it sticks.
  4. Heat olive oil in a large skillet over medium heat and sear the salmon fillets, crust side down, for 2-3 minutes until golden brown.
  5. Transfer the skillet to the oven and bake the salmon for 8-10 minutes or until the salmon is cooked through.
  6. Meanwhile, toss the chopped Romaine lettuce with Caesar dressing in a large bowl.
  7. Plate the Caesar salad and top with the Parmesan crusted salmon fillets.
  8. Garnish with croutons and fresh lemon wedges, if desired.

  • For a lighter version, you can use a lower-fat Caesar dressing.
