A delicious and crispy Parmesan crusted salmon on a fresh Caesar salad, combining the rich flavors of baked salmon and the classic Caesar dressing.
Ingredients
- 4 salmon fillets
- 1/2 cup grated Parmesan cheese
- 1/4 cup breadcrumbs
- 1 tablespoon olive oil
- Salt and pepper to taste
- 4 cups Romaine lettuce, chopped
- 1/4 cup Caesar dressing
- 1/4 cup croutons
- Fresh lemon wedges (optional)
Instructions
- Preheat the oven to 400°F (200°C).
- Mix the grated Parmesan cheese and breadcrumbs in a shallow dish.
- Season the salmon fillets with salt and pepper, then coat the tops with the Parmesan-breadcrumb mixture, pressing lightly to ensure it sticks.
- Heat olive oil in a large skillet over medium heat and sear the salmon fillets, crust side down, for 2-3 minutes until golden brown.
- Transfer the skillet to the oven and bake the salmon for 8-10 minutes or until the salmon is cooked through.
- Meanwhile, toss the chopped Romaine lettuce with Caesar dressing in a large bowl.
- Plate the Caesar salad and top with the Parmesan crusted salmon fillets.
- Garnish with croutons and fresh lemon wedges, if desired.
Notes
- For a lighter version, you can use a lower-fat Caesar dressing.
- For extra flavor, sprinkle some extra Parmesan over the salad just before serving.
- You can substitute the salmon for other fish like trout or tilapia if preferred.
