Description

No-bake peanut butter cornflake cookies are a quick and easy treat made with just a few ingredients, offering a perfect balance of sweet and crunchy.

Ingredients

  • 1 cup granulated sugar
  • 1 cup light corn syrup
  • 1 cup creamy peanut butter
  • 6 cups cornflakes cereal
  • 1 tsp vanilla extract (optional)
  • Pinch of salt (optional)

Instructions

  1. In a large saucepan, combine sugar and corn syrup over medium heat. Stir continuously until the mixture begins to boil.
  2. Remove from heat and immediately stir in the peanut butter, vanilla extract (if using), and salt until smooth.
  3. Gently fold in the cornflakes, ensuring they are evenly coated with the peanut butter mixture.
  4. Drop spoonfuls of the mixture onto wax paper or a parchment-lined baking sheet.
  5. Let the cookies cool and set at room temperature for about 30 minutes.
  6. Once set, serve or store in an airtight container.

Notes

  • You can substitute honey for corn syrup for a different flavor.
  • Use crunchy peanut butter for added texture.
  • Add a drizzle of melted chocolate for an extra treat.
