Description

These pecan sugar cookies are soft, buttery, and packed with crunchy pecans for a delightful twist on the classic sugar cookie.


Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3/4 cup chopped pecans
  • Additional granulated sugar for rolling (optional)


Instructions

  1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large bowl, cream together the butter and sugar until light and fluffy.
  3. Beat in the egg and vanilla extract until well combined.
  4. In a separate bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Fold in the chopped pecans.
  7. Form dough into 1-inch balls and roll in additional sugar if desired.
  8. Place balls on the prepared baking sheet about 2 inches apart and flatten slightly with the bottom of a glass.
  9. Bake for 10-12 minutes or until the edges are lightly golden.
  10. Allow cookies to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
