Description

Penne Rosa Pasta is a flavorful and creamy dish made with penne pasta, sautéed vegetables, and a spicy tomato cream sauce. It’s a quick and satisfying meal perfect for weeknights.


Ingredients

  • 12 oz penne pasta
  • 1 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 small red onion, sliced
  • 1 cup sliced mushrooms
  • 1 small zucchini, sliced
  • 1 cup cherry tomatoes, halved
  • 1/2 tsp red pepper flakes
  • 2 cups marinara sauce
  • 1/2 cup heavy cream or plain Greek yogurt
  • 2 cups fresh spinach
  • 1/4 cup grated Parmesan cheese
  • Salt and black pepper to taste
  • Fresh basil for garnish (optional)


Instructions

  1. Cook penne pasta according to package directions. Drain and set aside.
  2. Heat olive oil in a large skillet over medium heat. Add garlic and red onion, and sauté for 2 minutes.
  3. Add mushrooms, zucchini, and cherry tomatoes. Cook until vegetables are tender, about 5-6 minutes.
  4. Stir in red pepper flakes and marinara sauce. Bring to a simmer.
  5. Reduce heat to low and stir in heavy cream or Greek yogurt. Mix until well combined.
  6. Add spinach and cook until wilted.
  7. Stir in the cooked pasta and mix well to coat.
  8. Season with salt and pepper to taste. Sprinkle with Parmesan cheese.
  9. Garnish with fresh basil if desired and serve warm.
