- 4 boneless, skinless chicken breasts
- 1 tbsp olive oil
- 1 tsp Italian seasoning
- Salt and black pepper to taste
- 1 cup marinara or pizza sauce
- 1 1/2 cups shredded mozzarella cheese
- 20–24 slices pepperoni
- 2 tbsp grated Parmesan cheese (optional)
- Fresh basil or parsley, for garnish
Instructions
- Preheat oven to 400°F (200°C). Lightly grease a baking dish with olive oil.
- Season both sides of the chicken breasts with salt, pepper, and Italian seasoning.
- Place chicken in the baking dish and bake for 20 minutes, uncovered.
- Remove from oven and spoon marinara sauce over each piece of chicken.
- Top with shredded mozzarella and arrange pepperoni slices over the cheese.
- Sprinkle with Parmesan cheese if using.
- Return to oven and bake for an additional 10–15 minutes, or until chicken is cooked through (internal temp of 165°F/74°C) and cheese is bubbly and golden.
- Garnish with fresh basil or parsley before serving.
