Description

A refreshing tropical twist on classic lemonade, combining fresh pineapple juice and tangy lemon for a delightful summer beverage.

Ingredients

  • 2 cups fresh pineapple chunks (about 1 small pineapple)
  • 1 cup freshly squeezed lemon juice (about 45 lemons)
  • 1/2 to 3/4 cup granulated sugar (adjust to taste)
  • 4 cups cold water
  • Ice cubes
  • Pineapple or lemon slices, for garnish (optional)
  • Fresh mint leaves, for garnish (optional)

Instructions

  1. In a blender, puree the pineapple chunks until smooth.
  2. Strain the pineapple puree through a fine mesh sieve into a pitcher, pressing to extract juice and discard pulp.
  3. Add the freshly squeezed lemon juice to the pitcher.
  4. Stir in granulated sugar until completely dissolved.
  5. Add 4 cups of cold water and stir to combine. Taste and adjust sweetness or tartness as desired.
  6. Refrigerate until chilled, or serve immediately over ice.
  7. Garnish with pineapple or lemon slices and fresh mint leaves if desired.

Notes

  • For a fizzy version, replace cold water with sparkling water just before serving.
  • Adjust sugar based on sweetness of the pineapple.
  • To make ahead, keep base juice chilled and add ice or sparkling water right before serving.
  • Pulp can be used in smoothies or as a topping for yogurt or oatmeal.
