Description

A Pizookie is a deliciously warm, gooey chocolate chip cookie baked in a skillet and typically served with a scoop of ice cream on top. It’s a perfect dessert for sharing and combines the best parts of a cookie and a pie.


Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 tsp vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 2 cups semi-sweet chocolate chips
  • Vanilla ice cream, for serving (optional)


Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, cream together butter, brown sugar, and granulated sugar until light and fluffy.
  3. Add eggs one at a time, then mix in vanilla extract.
  4. In a separate bowl, whisk together flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. Fold in the chocolate chips.
  7. Spread the dough evenly into a 10-inch oven-safe skillet.
  8. Bake for 20-25 minutes, or until the edges are golden and the center is set but still soft.
  9. Remove from oven and let cool slightly before serving.
  10. Top with a scoop of vanilla ice cream if desired and serve warm.

Notes

  • Use a cast-iron skillet for best results.
  • Do not overbake if you prefer a gooey center.
  • Feel free to substitute chocolate chips with chunks or a mix of dark and milk chocolate.
