Description
A Pizookie is a deliciously warm, gooey chocolate chip cookie baked in a skillet and typically served with a scoop of ice cream on top. It’s a perfect dessert for sharing and combines the best parts of a cookie and a pie.
Ingredients
- 1 cup unsalted butter, softened
- 1 cup brown sugar, packed
- 1/2 cup granulated sugar
- 2 large eggs
- 2 tsp vanilla extract
- 2 1/2 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 2 cups semi-sweet chocolate chips
- Vanilla ice cream, for serving (optional)
Instructions
- Preheat oven to 350°F (175°C).
- In a large bowl, cream together butter, brown sugar, and granulated sugar until light and fluffy.
- Add eggs one at a time, then mix in vanilla extract.
- In a separate bowl, whisk together flour, baking soda, and salt.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- Fold in the chocolate chips.
- Spread the dough evenly into a 10-inch oven-safe skillet.
- Bake for 20-25 minutes, or until the edges are golden and the center is set but still soft.
- Remove from oven and let cool slightly before serving.
- Top with a scoop of vanilla ice cream if desired and serve warm.
Notes
- Use a cast-iron skillet for best results.
- Do not overbake if you prefer a gooey center.
- Feel free to substitute chocolate chips with chunks or a mix of dark and milk chocolate.
