A quick and easy homemade alphabet soup packed with vegetables, pasta, and flavor. Perfect for a comforting weeknight meal.

- 1 tablespoon olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 4 cups vegetable broth
- 1 can (14.5 oz) diced tomatoes
- 1 cup alphabet pasta
- 1 teaspoon dried basil
- 1/2 teaspoon dried oregano
- Salt and pepper to taste
- 1/2 cup frozen peas (optional)
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion and garlic and sauté for 2-3 minutes until fragrant.
- Add carrots and celery and cook for another 5 minutes until slightly softened.
- Pour in vegetable broth and diced tomatoes with their juice.
- Stir in basil, oregano, salt, and pepper.
- Bring the mixture to a boil, then add the alphabet pasta.
- Reduce heat and simmer for 10 minutes or until the pasta and vegetables are tender.
- If using, stir in frozen peas and cook for another 2 minutes.
- Adjust seasoning if needed and serve warm.
Notes
- You can use chicken broth instead of vegetable broth if not vegetarian.
- Frozen mixed vegetables can be added for extra variety.
- Leftovers can be stored in the fridge for up to 3 days.
