Description

A quick and easy homemade alphabet soup packed with vegetables, pasta, and flavor. Perfect for a comforting weeknight meal.


Ingredients

  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cups vegetable broth
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup alphabet pasta
  • 1 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • Salt and pepper to taste
  • 1/2 cup frozen peas (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and garlic and sauté for 2-3 minutes until fragrant.
  3. Add carrots and celery and cook for another 5 minutes until slightly softened.
  4. Pour in vegetable broth and diced tomatoes with their juice.
  5. Stir in basil, oregano, salt, and pepper.
  6. Bring the mixture to a boil, then add the alphabet pasta.
  7. Reduce heat and simmer for 10 minutes or until the pasta and vegetables are tender.
  8. If using, stir in frozen peas and cook for another 2 minutes.
  9. Adjust seasoning if needed and serve warm.

Notes

  • You can use chicken broth instead of vegetable broth if not vegetarian.
  • Frozen mixed vegetables can be added for extra variety.
  • Leftovers can be stored in the fridge for up to 3 days.
