Description

Decadent and rich, these Raspberry Truffles are a perfect blend of dark chocolate and tart raspberries, ideal for special occasions or as a homemade gift.


Ingredients

  • 1 cup fresh raspberries
  • 12 oz dark chocolate, chopped
  • 1/2 cup heavy cream
  • 1 tsp vanilla extract
  • 1 tbsp unsalted butter
  • Cocoa powder or melted chocolate (for coating)


Instructions

  1. In a small saucepan, heat the raspberries over medium heat until they break down and become saucy. Strain through a fine mesh sieve to remove seeds. Set aside the puree.
  2. In another saucepan, heat the heavy cream until just simmering. Remove from heat and add chopped chocolate. Let sit for 2 minutes.
  3. Stir the chocolate and cream mixture until smooth. Add the raspberry puree, butter, and vanilla extract. Mix well.
  4. Refrigerate the mixture for 1-2 hours or until firm enough to scoop.
  5. Using a small spoon or melon baller, scoop the mixture and roll into balls.
  6. Roll the truffles in cocoa powder or dip in melted chocolate for coating.
  7. Place on a parchment-lined tray and refrigerate until firm.
