Description

Red, White, and Blue Poke Cake is a festive and easy dessert perfect for patriotic holidays like the 4th of July. Made with a white cake base, vibrant red and blue gelatin, and topped with whipped topping, it’s as delicious as it is eye-catching.

Ingredients

  • 1 box white cake mix (plus ingredients to prepare)
  • 1 package (3 oz) strawberry or cherry gelatin
  • 1 package (3 oz) berry blue gelatin
  • 2 cups boiling water, divided
  • 1 container (8 oz) whipped topping (like Cool Whip), thawed
  • Red, white, and blue sprinkles for decoration

Instructions

  1. Prepare and bake the white cake according to package instructions in a 9×13-inch pan. Let it cool for about 15 minutes.
  2. Using a fork or the handle of a wooden spoon, poke holes all over the cake, spacing about 1 inch apart.
  3. In separate bowls, dissolve each gelatin packet in 1 cup of boiling water. Stir until completely dissolved.
  4. Carefully pour the red gelatin over one-third of the cake, then pour the blue gelatin over another third, leaving a section white or mixing for a tie-dye effect.
  5. Refrigerate the cake for at least 2 hours to let the gelatin set.
  6. Spread whipped topping evenly over the cake.
  7. Decorate with patriotic sprinkles before serving.

Notes

  • For a richer flavor, substitute whipped topping with homemade whipped cream.
  • Use a toothpick for more precise gelatin distribution.
  • Can be made a day ahead and stored in the fridge.
