Ingredients
- 1 lb shrimp, peeled and deveined
- 1 tbsp olive oil
- 1 tsp paprika
- 1/2 tsp garlic powder
- Salt and pepper to taste
- 2 cups cooked white or brown rice
- 1 cup shredded carrots
- 1 cucumber, sliced
- 1 avocado, sliced
- 1/4 cup chopped green onions
- 1 tbsp sesame seeds (optional)
- 1/2 cup mayonnaise
- 1-2 tbsp sriracha (adjust to taste)
- 1 tsp lime juice
Instructions
- In a bowl, toss the shrimp with olive oil, paprika, garlic powder, salt, and pepper.
- Heat a skillet over medium-high heat and cook the shrimp for 2-3 minutes per side until pink and cooked through. Set aside.
- In a small bowl, mix mayonnaise, sriracha, and lime juice to make the spicy mayo. Adjust the sriracha to taste.
- Divide the cooked rice among serving bowls.
- Top the rice with cooked shrimp, shredded carrots, cucumber, avocado, and green onions.
- Drizzle with spicy mayo and sprinkle with sesame seeds if using.
- Serve immediately and enjoy!
Notes
- You can use jasmine rice, sushi rice, or even cauliflower rice for a low-carb option.
- Adjust the spice level by using more or less sriracha in the mayo.
- Pre-cooked shrimp can be used for a quicker meal; just heat and season.
