Description

A hearty and flavorful slow cooker casserole loaded with beef, beans, corn, peppers, and cheese—perfect for easy family dinners.


Ingredients

  • 1 lb ground beef
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 (15 oz) can pinto beans, drained and rinsed
  • 1 (15 oz) can corn, drained
  • 1 (10 oz) can diced tomatoes with green chilies
  • 1 small onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 1 (1 oz) envelope taco seasoning
  • 1 cup shredded cheddar cheese
  • Salt and pepper to taste


Instructions

  1. In a skillet over medium heat, brown the ground beef until no longer pink; drain excess fat.
  2. Transfer the beef to the slow cooker. Add beans, corn, diced tomatoes, onion, bell pepper, garlic, and taco seasoning.
  3. Stir well to combine. Season with salt and pepper.
  4. Cover and cook on LOW for 4–6 hours or HIGH for 2–3 hours, until vegetables are tender and flavors meld.
  5. About 15 minutes before serving, sprinkle cheddar cheese over the top. Cover and cook until cheese is melted.
  6. Serve warm, optionally topped with sour cream, chopped cilantro, or sliced green onions.

Notes

  • For extra spice, use diced green chilies or a dash of hot sauce.
  • Feel free to substitute ground turkey or chicken to reduce fat.
  • Perfect served over rice or with tortilla chips.
