Description
A hearty and flavorful slow cooker casserole loaded with beef, beans, corn, peppers, and cheese—perfect for easy family dinners.
Ingredients
- 1 lb ground beef
- 1 (15 oz) can black beans, drained and rinsed
- 1 (15 oz) can pinto beans, drained and rinsed
- 1 (15 oz) can corn, drained
- 1 (10 oz) can diced tomatoes with green chilies
- 1 small onion, diced
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 1 (1 oz) envelope taco seasoning
- 1 cup shredded cheddar cheese
- Salt and pepper to taste
Instructions
- In a skillet over medium heat, brown the ground beef until no longer pink; drain excess fat.
- Transfer the beef to the slow cooker. Add beans, corn, diced tomatoes, onion, bell pepper, garlic, and taco seasoning.
- Stir well to combine. Season with salt and pepper.
- Cover and cook on LOW for 4–6 hours or HIGH for 2–3 hours, until vegetables are tender and flavors meld.
- About 15 minutes before serving, sprinkle cheddar cheese over the top. Cover and cook until cheese is melted.
- Serve warm, optionally topped with sour cream, chopped cilantro, or sliced green onions.
Notes
- For extra spice, use diced green chilies or a dash of hot sauce.
- Feel free to substitute ground turkey or chicken to reduce fat.
- Perfect served over rice or with tortilla chips.
- Make it vegetarian by omitting meat and adding extra beans or a meat substitute.
