Ingredients
- 4 boneless, skinless chicken breasts
- 1.5 lbs baby potatoes, halved
- 4 cloves garlic, minced
- 1/2 cup grated Parmesan cheese
- 1 cup chicken broth
- 1/2 cup heavy cream
- 2 tablespoons olive oil
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons chopped fresh parsley (optional, for garnish)
Instructions
- Place chicken breasts in the bottom of the slow cooker.
- Add the halved baby potatoes around the chicken.
- In a medium bowl, whisk together garlic, Parmesan cheese, chicken broth, heavy cream, olive oil, Italian seasoning, salt, and pepper.
- Pour the sauce mixture over the chicken and potatoes.
- Cover and cook on low for 6-7 hours or on high for 3-4 hours, until chicken is cooked through and potatoes are tender.
- Garnish with chopped parsley before serving, if desired.
