Description

A hearty and flavorful slow cooker meal featuring tender chicken breasts, baby potatoes, and a rich Parmesan garlic sauce. Perfect for busy days and comforting dinners.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1.5 lbs baby potatoes, halved
  • 4 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 2 tablespoons olive oil
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons chopped fresh parsley (optional, for garnish)

Instructions

  1. Place chicken breasts in the bottom of the slow cooker.
  2. Add the halved baby potatoes around the chicken.
  3. In a medium bowl, whisk together garlic, Parmesan cheese, chicken broth, heavy cream, olive oil, Italian seasoning, salt, and pepper.
  4. Pour the sauce mixture over the chicken and potatoes.
  5. Cover and cook on low for 6-7 hours or on high for 3-4 hours, until chicken is cooked through and potatoes are tender.
  6. Garnish with chopped parsley before serving, if desired.

Notes

  • Use skin-on bone-in chicken thighs for extra flavor if preferred.
  • Add vegetables like carrots or green beans for a complete one-pot meal.
  • Grate Parmesan fresh for the best flavor and melting consistency.
