Description

The Smoky Mezcal Sour is a bold and balanced cocktail that combines the earthy richness of mezcal with fresh citrus and a touch of sweetness, topped with a silky foam from egg white for a sophisticated finish.


Ingredients

  • 2 ounces mezcal
  • 3/4 ounce fresh lime juice
  • 1/2 ounce fresh lemon juice
  • 3/4 ounce simple syrup
  • 1 egg white
  • Ice
  • Angostura bitters, for garnish (optional)
  • Lime or lemon twist, for garnish

Instructions

  1. In a cocktail shaker, combine mezcal, lime juice, lemon juice, simple syrup, and egg white. Dry shake (no ice) for 15 seconds to create foam.
  2. Add ice and shake again vigorously for another 15–20 seconds until well chilled.
  3. Strain into a chilled coupe or rocks glass.
  4. Garnish with a few drops of bitters or a citrus twist, if desired. Serve immediately.

Notes

  • Dry shaking the egg white first ensures a better, thicker foam.
  • For a vegan alternative, use aquafaba (chickpea brine) instead of egg white.
  • Adjust syrup to taste depending on mezcal strength and citrus acidity.
