- 2 ounces mezcal
- 3/4 ounce fresh lime juice
- 1/2 ounce fresh lemon juice
- 3/4 ounce simple syrup
- 1 egg white
- Ice
- Angostura bitters, for garnish (optional)

Instructions
- In a cocktail shaker, combine mezcal, lime juice, lemon juice, simple syrup, and egg white. Dry shake (no ice) for 15 seconds to create foam.
- Add ice and shake again vigorously for another 15–20 seconds until well chilled.
- Strain into a chilled coupe or rocks glass.
- Garnish with a few drops of bitters or a citrus twist, if desired. Serve immediately.
Notes
- Dry shaking the egg white first ensures a better, thicker foam.
- For a vegan alternative, use aquafaba (chickpea brine) instead of egg white.
- Adjust syrup to taste depending on mezcal strength and citrus acidity.
