- 4 cups sliced yellow squash (about 4-5 medium squash)
- 1 small onion, finely chopped
- 2 tablespoons butter
- 1/2 cup sour cream
- 1/2 cup mayonnaise
- 1 cup shredded cheddar cheese
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup crushed butter crackers (like Ritz)
- 2 tablespoons melted butter (for topping)
Instructions
- Preheat oven to 350°F (175°C). Lightly grease a 9×9 inch baking dish.
- In a large skillet over medium heat, melt 2 tablespoons butter. Add squash and onion and cook until tender, about 10 minutes. Drain any excess liquid.
- In a large bowl, combine cooked squash and onion with sour cream, mayonnaise, cheese, garlic powder, salt, and pepper. Mix well.
- Spread the mixture evenly into the prepared baking dish.
- In a small bowl, mix crushed crackers with melted butter and sprinkle evenly over the top of the casserole.
- Bake for 25-30 minutes, or until the top is golden brown and the casserole is bubbly.
- Let rest for 5 minutes before serving.
Notes
- You can substitute Greek yogurt for the sour cream or mayonnaise for a lighter version.
- Add cooked bacon bits or diced pimentos for extra flavor.
- Can be made ahead and baked just before serving.
