- 2 cups cooked shredded chicken
- 4 oz cream cheese, softened
- 1/2 cup shredded cheddar cheese
- 1/2 cup canned black beans, drained and rinsed
- 1/2 cup corn kernels (fresh, frozen or canned)
- 1/4 cup diced red bell pepper
- 1/4 cup chopped green onions
- 1 tbsp taco seasoning
- 1 tbsp lime juice
- Salt and pepper to taste
- 4 large flour tortillas
Instructions
- In a large mixing bowl, combine cream cheese, shredded cheddar, and lime juice until smooth.
- Stir in the shredded chicken, black beans, corn, red bell pepper, green onions, and taco seasoning. Mix until well combined.
- Season with salt and pepper to taste.
- Warm the tortillas slightly to make them more pliable.
- Spoon the chicken mixture evenly into the center of each tortilla.
- Fold in the sides and roll up the tortilla tightly to form a wrap.
- Optional: Toast the wraps on a skillet over medium heat for 2-3 minutes per side until golden and warm.
- Serve immediately or wrap in foil for an on-the-go meal.
Notes
- You can substitute Greek yogurt for some of the cream cheese for a lighter option.
- Add jalapeños or hot sauce if you prefer a spicier flavor.
- Wraps can be made ahead and stored in the fridge for up to 2 days.
