Description

A hearty and comforting split pea soup made with green split peas, vegetables, and savory herbs, simmered until thick and creamy—perfect for a nourishing meal.


Ingredients

  • 1 tbsp olive oil
  • 1 medium onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 2 cloves garlic, minced
  • 1 tsp dried thyme
  • 1 bay leaf
  • 2 cups dried green split peas, rinsed
  • 6 cups vegetable or chicken broth
  • Salt and pepper to taste
  • Optional: 1 cup diced ham or smoked sausage
  • Chopped parsley, for garnish (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery; sauté until softened, about 5-6 minutes.
  2. Stir in garlic, thyme, and bay leaf, cooking for 1 minute.
  3. Add split peas and broth. Bring to a boil, then reduce heat and simmer uncovered for 1 to 1.5 hours, or until peas are soft and soup is thickened.
  4. Stir occasionally and add more broth or water if needed to adjust consistency.
  5. Remove bay leaf. Blend part of the soup for a smoother texture if desired.
  6. Stir in ham or sausage if using, and heat through. Season with salt and pepper to taste.
  7. Serve hot, garnished with chopped parsley if desired.

Notes

  • Split peas do not require soaking but should be rinsed before use.
  • For a vegetarian version, skip the meat and use vegetable broth.
  • Soup thickens as it cools—add broth or water when reheating.
