Description

These Spring Roll Bowls with Sweet Garlic Lime Sauce are a vibrant and flavorful twist on classic spring rolls, served in a bowl for a more substantial meal. Loaded with fresh veggies, rice noodles, and a zesty sauce, this dish is a perfect balance of textures and flavors.

Ingredients

Rice Noodles:

  • 8 ounces rice noodles
  • 1 tablespoon sesame oil

Vegetables:

  • 2 cups shredded carrots
  • 1 red bell pepper, thinly sliced
  • 1 cucumber, julienned
  • 1 cup shredded purple cabbage
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup chopped green onions
  • 1/4 cup chopped peanuts (optional)
  • 1 tablespoon sesame seeds (optional)

Sweet Garlic Lime Sauce:

  • 1/4 cup lime juice (about 2 limes)
  • 3 tablespoons brown sugar
  • 2 tablespoons soy sauce
  • 2 tablespoons fish sauce or tamari for vegetarian
  • 2 cloves garlic, minced
  • 1 teaspoon grated fresh ginger
  • 1 teaspoon sriracha (optional)
  • 1/4 cup warm water

Instructions

  1. Cook the Rice Noodles: Cook the rice noodles according to package instructions. Drain and rinse under cold water, then toss with sesame oil to prevent sticking.
  2. Prepare the Sweet Garlic Lime Sauce: In a small bowl, whisk together all sauce ingredients until sugar is dissolved.
  3. Assemble the Bowls: Divide the noodles among bowls and top with carrots, red bell pepper, cucumber, cabbage, cilantro, and green onions. Drizzle generously with the sweet garlic lime sauce.
  4. Final Touches: Sprinkle with peanuts and sesame seeds if using. Serve immediately, or chill for a cold noodle bowl.

Notes

  • For extra protein, add grilled tofu, shrimp, or chicken.
  • Customize the veggies based on what’s in season or on hand.
  • Sauce can be made ahead and refrigerated for up to 1 week.
