Description
A quick and easy stir‑fry featuring tender ground beef, chewy noodles, crisp vegetables and a sticky, savory-sweet hoisin sauce.
Ingredients
- 1 tbsp olive oil
- 1 lb (450 g) extra-lean ground beef
- 1 medium onion, sliced
- 3 cloves garlic, minced
- 1 large carrot, shredded or julienned
- 1 cup shredded bok choy (or Napa cabbage)
- 9 oz (≈255 g) ramen noodles
- 2 tbsp oyster sauce
- 2 tbsp hoisin sauce
- 1 tbsp dark soy sauce
- 2 tbsp sesame oil
- 2 tsp rice vinegar
- 3 green onions, chopped (for garnish)
- 2 tbsp sesame seeds (for garnish)
Instructions
- Cook noodles per package until al dente. Drain and set aside.
- Heat olive oil in wok/skillet over high heat. Add beef, spread in pan, cook untouched ~5 min until charred.
- Flip beef to break up and stir.
- Add onion; cook 1 min, then garlic; cook 30 sec until fragrant.
- Add bok choy and carrot; cook another minute until just softened.
- Turn off heat. Add noodles then oyster sauce, hoisin sauce, dark soy sauce, rice vinegar and sesame oil. Toss to coat evenly.
- Garnish with green onions and sesame seeds. Serve immediately.
Notes
- Store leftovers in airtight container for 3–4 days; reheat in skillet with splash of water.
- Don’t freeze; noodles & bok choy get soggy.
- Swap ground beef with pork, turkey, chicken or thinly sliced steak.
- Use any stir-fry veggies: bell pepper, mushrooms, snow peas, broccoli, etc.
