Description

Strawberry Cheesecake Cookies are soft, buttery cookies filled with real strawberries and a creamy cheesecake center, making them a perfect fruity dessert treat.


Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 2 3/4 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 cup freeze-dried strawberries, crushed
  • 1 cup white chocolate chips
  • 8 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1/2 tsp vanilla extract (for filling)


Instructions

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a large bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in eggs and vanilla extract until well combined.
  4. In a separate bowl, whisk together flour, baking soda, baking powder, and salt. Gradually add dry ingredients to wet ingredients.
  5. Fold in crushed freeze-dried strawberries and white chocolate chips.
  6. In a small bowl, mix cream cheese, powdered sugar, and vanilla extract until smooth.
  7. Scoop cookie dough balls and flatten each slightly. Add a small dollop of cream cheese mixture in the center and cover with another piece of dough, sealing edges.
  8. Place cookies on prepared baking sheet and bake for 12–14 minutes, or until edges are lightly golden.
  9. Cool on baking sheet for 5 minutes before transferring to a wire rack.

Notes

  • Chill dough for 20 minutes if too soft to handle.
  • Use a cookie scoop for even-sized cookies.
  • Store cookies in an airtight container in the refrigerator for up to 5 days.
