A refreshing and vibrant salad featuring fresh strawberries, crisp greens, and a crunchy topping, all tossed in a light champagne vinaigrette.
Ingredients
- 6 cups mixed salad greens
- 1 cup fresh strawberries, sliced
- 1/2 cup candied pecans or sliced almonds
- 1/4 cup crumbled feta or goat cheese
- 1/4 cup red onion, thinly sliced
- 1/2 cup crunchy granola or crushed pretzels
- 1/4 cup extra virgin olive oil
- 2 tbsp champagne vinegar
- 1 tbsp honey
- 1 tsp Dijon mustard
- Salt and pepper to taste
Instructions
- In a large bowl, combine the salad greens, strawberries, red onion, nuts, cheese, and granola or pretzels.
- In a small bowl or jar, whisk together the olive oil, champagne vinegar, honey, Dijon mustard, salt, and pepper until well combined.
- Drizzle the champagne vinaigrette over the salad just before serving and toss gently to coat.
- Serve immediately and enjoy the fresh, crunchy texture.
Notes
- You can substitute the nuts with sunflower seeds for a nut-free version.
