These Strawberry Oatmeal Bars are a delicious and healthy treat made with wholesome oats, fresh strawberries, and a buttery crumb topping. Perfect for breakfast, a snack, or dessert.

- 1 cup rolled oats
- 3/4 cup all-purpose flour
- 1/3 cup brown sugar
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, melted
- 1 cup fresh strawberries, chopped
- 1 tablespoon granulated sugar
- 1 teaspoon cornstarch
- 1/2 teaspoon vanilla extract
Instructions
- Preheat oven to 350°F (175°C). Line an 8×8 inch baking dish with parchment paper.
- In a bowl, mix oats, flour, brown sugar, baking soda, and salt.
- Pour in melted butter and stir until the mixture becomes crumbly.
- Press two-thirds of the mixture into the bottom of the prepared pan to form a crust.
- In a separate bowl, mix chopped strawberries with granulated sugar, cornstarch, and vanilla extract.
- Spread the strawberry mixture evenly over the crust.
- Sprinkle the remaining oat mixture on top of the strawberries.
- Bake for 30–35 minutes or until the top is golden brown and the strawberries are bubbly.
- Allow to cool completely before cutting into bars.
Notes
- Use parchment paper for easy removal and cleanup.
- You can substitute frozen strawberries if fresh ones aren’t available.
- Bars can be stored in an airtight container at room temperature for up to 3 days or refrigerated for up to a week.
