Description

These Strawberry Oatmeal Bars are a delicious and healthy treat made with wholesome oats, fresh strawberries, and a buttery crumb topping. Perfect for breakfast, a snack, or dessert.


Ingredients

  • 1 cup rolled oats
  • 3/4 cup all-purpose flour
  • 1/3 cup brown sugar
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1 cup fresh strawberries, chopped
  • 1 tablespoon granulated sugar
  • 1 teaspoon cornstarch
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8 inch baking dish with parchment paper.
  2. In a bowl, mix oats, flour, brown sugar, baking soda, and salt.
  3. Pour in melted butter and stir until the mixture becomes crumbly.
  4. Press two-thirds of the mixture into the bottom of the prepared pan to form a crust.
  5. In a separate bowl, mix chopped strawberries with granulated sugar, cornstarch, and vanilla extract.
  6. Spread the strawberry mixture evenly over the crust.
  7. Sprinkle the remaining oat mixture on top of the strawberries.
  8. Bake for 30–35 minutes or until the top is golden brown and the strawberries are bubbly.
  9. Allow to cool completely before cutting into bars.

Notes

  • Use parchment paper for easy removal and cleanup.
  • You can substitute frozen strawberries if fresh ones aren’t available.
  • Bars can be stored in an airtight container at room temperature for up to 3 days or refrigerated for up to a week.
