Taco Potatoes are a delicious fusion of baked potatoes and taco toppings, perfect for a hearty and satisfying meal.
Ingredients
- 4 large russet potatoes
- 1 lb ground beef
- 1 packet taco seasoning mix
- 1/2 cup water
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1/2 cup salsa
- 1/4 cup chopped green onions
- 1/4 cup chopped fresh cilantro (optional)
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C). Scrub potatoes clean, pierce with a fork, rub with olive oil, and sprinkle with salt.
- Place potatoes on a baking sheet and bake for 45-60 minutes or until tender.
- Meanwhile, cook ground beef in a skillet over medium heat until browned. Drain excess fat.
- Add taco seasoning and water to the beef, stir well, and simmer for 5-7 minutes until thickened.
- Once potatoes are done, cut a slit in the top of each and fluff the insides with a fork.
- Top each potato with taco beef, shredded cheese, sour cream, salsa, green onions, and cilantro if using.
- Serve hot and enjoy!

- Use sweet potatoes for a healthier twist.
- Can substitute ground turkey or plant-based meat for a lighter or vegetarian option.
