Description

Taco Potatoes are a delicious fusion of baked potatoes and taco toppings, perfect for a hearty and satisfying meal.


Ingredients

  • 4 large russet potatoes
  • 1 lb ground beef
  • 1 packet taco seasoning mix
  • 1/2 cup water
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/2 cup salsa
  • 1/4 cup chopped green onions
  • 1/4 cup chopped fresh cilantro (optional)
  • 1 tbsp olive oil
  • Salt and pepper to taste


Instructions

  1. Preheat oven to 400°F (200°C). Scrub potatoes clean, pierce with a fork, rub with olive oil, and sprinkle with salt.
  2. Place potatoes on a baking sheet and bake for 45-60 minutes or until tender.
  3. Meanwhile, cook ground beef in a skillet over medium heat until browned. Drain excess fat.
  4. Add taco seasoning and water to the beef, stir well, and simmer for 5-7 minutes until thickened.
  5. Once potatoes are done, cut a slit in the top of each and fluff the insides with a fork.
  6. Top each potato with taco beef, shredded cheese, sour cream, salsa, green onions, and cilantro if using.
  7. Serve hot and enjoy!

  • Use sweet potatoes for a healthier twist.
  • Can substitute ground turkey or plant-based meat for a lighter or vegetarian option.
