Description

Tomatillo Salsa, also known as salsa verde, is a bright, tangy, and slightly spicy green salsa made from tomatillos, chilies, garlic, and fresh herbs. It’s perfect for dipping, topping tacos, or pairing with grilled meats.


Ingredients

  • 1 lb tomatillos, husked and rinsed
  • 2 cloves garlic
  • 1/2 cup chopped onion
  • 12 jalapeños or serrano chilies (seeded for less heat)
  • 1/2 cup fresh cilantro leaves
  • 1 tablespoon lime juice
  • 1/2 teaspoon salt
  • 1 tablespoon vegetable oil (optional, for roasting)


Instructions

  1. Preheat oven to 425°F (220°C). Place tomatillos, garlic, and chilies on a baking sheet. Drizzle with oil if using and roast for 15 minutes, or until tomatillos are soft and slightly charred.
  2. Transfer roasted vegetables to a blender or food processor. Add onion, cilantro, lime juice, and salt.
  3. Blend until smooth or desired texture is reached.
  4. Taste and adjust salt or lime juice if needed.
  5. Cool slightly and serve with tortilla chips or as a topping for tacos, burritos, and more.

Notes

  • For a raw version, blend all ingredients without roasting for a brighter flavor.
  • Store in the refrigerator for up to 1 week.
  • Add avocado for a creamy variation of salsa verde.
