Description
Tomatillo Salsa, also known as salsa verde, is a bright, tangy, and slightly spicy green salsa made from tomatillos, chilies, garlic, and fresh herbs. It’s perfect for dipping, topping tacos, or pairing with grilled meats.
Ingredients
- 1 lb tomatillos, husked and rinsed
- 2 cloves garlic
- 1/2 cup chopped onion
- 1–2 jalapeños or serrano chilies (seeded for less heat)
- 1/2 cup fresh cilantro leaves
- 1 tablespoon lime juice
- 1/2 teaspoon salt
- 1 tablespoon vegetable oil (optional, for roasting)
Instructions
- Preheat oven to 425°F (220°C). Place tomatillos, garlic, and chilies on a baking sheet. Drizzle with oil if using and roast for 15 minutes, or until tomatillos are soft and slightly charred.
- Transfer roasted vegetables to a blender or food processor. Add onion, cilantro, lime juice, and salt.
- Blend until smooth or desired texture is reached.
- Taste and adjust salt or lime juice if needed.
- Cool slightly and serve with tortilla chips or as a topping for tacos, burritos, and more.
Notes
- For a raw version, blend all ingredients without roasting for a brighter flavor.
- Store in the refrigerator for up to 1 week.
- Add avocado for a creamy variation of salsa verde.
